The Low-Carb Sandwich Trick That Makes Tempeh Chips the Perfect Side
Learn how to make low-carb zucchini buns and pair them with tempeh chips for a high-protein, balanced meal.
This is one of those sandwich tricks that genuinely surprises people because once you try it, you don’t really miss the bread.
The idea is simple: instead of relying on traditional bread for your sandwich, you build a low-carb “bread” using vegetables, then pair it with something crunchy and protein-rich like tempeh chips on the side.
It’s all about eating in a way that feels exciting, not restrictive, more protein, fewer carbs, and meals you actually look forward to.
Here’s how it works.
Low-Carb Zucchini Sandwich “Buns”
- Grab 2 large zucchini. Shred them into a large bowl over a towel, then squeeze out the excess water really well — really squeeze until you’re left with mostly dry zucchini pulp. Discard the liquid or use it for plants.
- Add to the zucchini pulp:
- 2–3 pinches of salt
- 1 tsp garlic powder
- 1 cup shredded mozzarella cheese
- Line a baking tray with parchment paper and lightly spray with avocado oil. Divide the mixture into 4 bun shapes and press them down evenly. You can sprinkle a little extra cheese on top if you want.
- Bake at 400°F for 20–22 minutes until set. Let them cool for a couple of minutes so they firm up.
Protein Mayo Spread (Optional but Highly Recommended)
Mix:
- 2 tbsp mayo
- 4 tbsp yogurt
- 1/2 tsp garlic powder
- Pinch of salt
- Fresh cracked pepper
This gives you a creamy, high-protein spread that replaces heavy sauces.
Build Your Sandwich
Inside the zucchini buns, add whatever you love:
- Tomato
- Lettuce
- Red onion
- Ham (or any protein you prefer)
Close it up, slice in half, and you’re done.
The Missing Piece: Tempeh Chips
Now here’s where the upgrade happens.
Instead of pairing your sandwich with regular chips or extra cheese-heavy sides, add tempeh chips on the side.
The result is a lunch that feels light, filling, and exciting not restrictive or boring.
